In a large heavy pot, heat 2 tbsp coconut oil over medium. Add 1 sweet onion, roughly chopped. Cook several minutes until golden.
Season onions w/pinch kosher salt & tsp red pepper flakes. Add 1 chopped red or yellow bell pepper (I used some sweet mini peppers.)
Add a bay leaf & another pinch of salt. Add 1lb sliced sausage (andouille, chorizo or linguica), stir. Add 28 oz can crushed tomatoes.
Add two 15 oz cans drained & rinsed chickpeas. Add enough beef or chicken broth to cover, about 2 cups. Add 2 cups destemmed chopped kale.
Simmer stew at least 20 mins, season to taste w/ salt & pep. Add chopped cilantro. Remove bay leaf. Serve w/ dollop of sour cream or greek yogurt!
